Ingredients

  • 2 medium eggplants, sliced into 1/2-inch thick rounds

  • Salt

  • 4 tablespoons olive oil

  • 2 cups marinara sauce

  • 2 cloves garlic, minced

  • 1/2 cup chopped fresh basil

  • 2 cups shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 1 cup cherry tomatoes, halved

  • Chopped fresh chives, for garnish

  • Fresh oregano, for garnish

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Place the eggplant slices on a layer of paper towels and sprinkle both sides with salt. Let them sit for about 10-15 minutes to draw out bitterness, then pat dry with paper towels.
