Whether you have holiday leftovers or a craving for something meaty, this creamy ham and potato soup recipe is simple, delicious, and sure to hit the spot.

Ingredients

  • 4 tablespoons salted butter, divided

  • 2 cups leftover ham, diced

  • 1 cup onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup diced celery

  • 1/4 cup all-purpose flour

  • 2 cups chicken broth

  • 1/2 teaspoon chicken bouillon

  • Salt and pepper, to taste

  • 1 carrot, peeled and sliced

  • 2 1/2 cups peeled and diced potatoes

  • 2 cups whole milk

  • 1 cup sharp cheddar cheese, shredded

  • Chopped green onions, for garnish (optional)

Instructions

  • In a large pot, melt 2 tablespoons of butter over medium-high heat. Add the ham and sauté until golden brown, about 5 minutes. Remove from pot.
  • In the same pot, melt the remaining 2 tablespoons of butter. Add the onion, garlic, and celery, and sauté until they soften, about 4 minutes.
  • Sprinkle flour over the vegetables and stir to coat. Add in the chicken broth, bouillon, salt, and pepper, and bring to a boil.
  • Reduce the heat to medium-low and add the carrots and potatoes. Simmer for about 12-15 minutes, or until the veggies are tender.
  • Gradually add the milk, stirring continuously, until the soup thickens, about 5 minutes.
  • Stir in the shredded cheddar cheese, continuing to cook until the cheese is fully melted. Return the cooked ham to the pot and heat it through.
  • Garnish with chopped green onions.
  • Serve and enjoy!

Notes

  • Use a sharp cheddar cheese for a bolder flavor; it complements the creamy soup well.
  • Consider adding a splash of dry white wine to the vegetables while sautéing for an extra depth of flavor.
