Roasting caramelizes the green beans, bringing out their natural sweetness. I find a little salt, pepper, and fresh garlic is all they need.

They’re so scrumptious, even picky eaters will devour them!

Roasted Green Beans Ingredients

Forget all the bold spice blends and condiments. A little seasoning and olive oil for roasting is all you need!

Here’s the rundown on the ingredients:

  • Green Beans – For this recipe, I use fresh green beans. I also recommend sorting your beans for similar sizes for even cooking.
  • Olive Oil – Toss them with olive oil so they turn out perfectly. If you use another cooking oil, choose something with a high smoke point.
  • Seasonings – Fresh garlic, salt, and black pepper are all these veggies need. It will enhance their natural sweetness and let their flavor shine.

How to Make Roasted Green Beans

When it comes to roasted vegetables, green beans are one of the simplest. Just a quick 5 minutes prep, then into the oven they go.

You can make them in these three simple steps:

1. Prepare the green beans. Toss the green beans with olive oil, garlic, salt, and pepper.

2. Bake. Arrange the green beans in a single layer on a baking sheet. Roast them for about 20 minutes at 400 degrees Fahrenheit.

3. Serve. Serve them immediately and enjoy!

Tips and Tricks

Anyone can learn to perfect roasted green beans. They’re super easy, call for minimal ingredients, and require very few steps.

But for the best roasted green beans, follow my tips and tricks:

  • Work some single layer magic. For even cooking, use green beans that are similar in size and thickness.
  • Fresh is best. When roasting green beans, be sure to use the freshest beans for the best results. They should be firm and have a snap to them.
  • Don’t overcrowd the pan! A single layer will ensure the green beans roast rather than steam. So don’t stack them on top of each other.
  • Mix up the beans. The great thing about this recipe is that it’s flexible. You can swap out the green beans with snap peas or edamame. Just note cooking times may vary.
  • Lift them with lemon. A squeeze of lemon brightens the green beans, making their flavor pop.
  • Have fun with mix-ins. Give your beans more oomph with mix-ins! I enjoy adding almonds for classic green bean almondine. Parmesan, mushrooms, or bacon are yummy, too.
  • Experiment with spices. These green beans have a simple seasoning, but feel free to mix things up. Try garlic powder, onion powder, Italian herbs, cayenne, or curry.

How to Store

Leftover green beans are best refrigerated. Freezing them changes their texture, so they don’t reheat well.

Luckily, they pair well with just about anything. Sometimes, I even eat them for a snack!

Here’s how to store and reheat roasted green beans:

To Store: Place leftover green beans in an air-tight container. Refrigerate them for up to 5 days.

To Reheat: Reheat leftover green beans in the oven at 350 degrees or the microwave until warm.
