Ingredients

  • 1 pound red potatoes, cut into small chunks

  • Olive oil, for coating the vegetables

  • salt and pepper

  • 2 medium zucchinis, sliced

  • 1 head cauliflower, cut into florets

  • 3 large carrots, sliced

  • 4 cloves garlic, minced

  • 1 red bell pepper, cut into strips

  • 1 large red onion, sliced

Instructions

  • Preheat the oven to 200 degrees Fahrenheit.
  • Toss potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
  • Roast in the oven and roast for about 20 minutes.
  • Meanwhile, toss zucchini, cauliflower, carrots, garlic, pepper, and onion with olive oil, salt, and pepper.
  • After 20 minutes, remove the potatoes from the oven. Add the other vegetables to the baking sheet with the partially cooked potatoes. Toss gently to mix.
  • Return the baking sheet to the oven. Roast for an additional 20-25 minutes, or until all the vegetables are tender. Stir halfway through to ensure even cooking.
